Vegan Dessert Recipe

Sometime you want to indulge in your favorite desserts. Holidays and special events allow us to be around our love ones, but it also allows us to be around our favorite deserts. This might pose as a problem for those who are on certain dietary restrictions. Sweet potato brownies are really easy to throw together and appeal to all diet restrictions. Try this recipe listed, and remember eat responsible. 


  • Mashed Sweet Potato (Orange Flesh) – 3/4 cup

  • Chia Seeds – 2 Tbsp

  • Water – 6 Tbsp

  • Melted Coconut Oil – 1/2 Cup

  • Raw Cacao Powder – 1/2 Cup

  • Coconut Flour – 1/2 Cup

  • Coconut Sugar – 1 cup

  • Vanilla Extract – 2 tsp

  • Dark Chocolate Chips – 1/4 Cup


  1. Preheat oven to 350 F.

  2. Peel and steam a sweet potato until tender. Mash with a fork- you need 3/4 cup.

  3. Stir together chia seeds and water and let sit 5 minutes until jelly-like.

  4. Over a double boiler, melt coconut oil. Remove from heat. Stir in cacao powder, coconut sugar, vanilla, chia seed mixture, and mix well. Fold in coconut flour and chocolate chips without over-mixing.

  5. Pour into a parchment-lined 8 x 8 baking pan and bake 35-45 minutes until you can insert a toothpick and it comes out clean. Let cool and place in the fridge. The coconut oil will cause the brownies to firm up so I like to under-bake these!
